I happen to teach a course on Quake editing at Worcester Polytechnic Institute. Actually it's called "Virtual Reality Performance Lab" and it's focussed on realtime performance along with computer projections, but for a lot of the computer projections I've used various FPS's. They're cheap, students love to buy them, and we cover everything from programming to architecture to art in the process of making stuff.
I've got a site in the making here. Some of the links don't work because I haven't gotten around to writing them up (I'm a big lazy bastard when it comes to writing things up.)
Currently we're working on a machinima version of Macbeth called (you guessed it) _Quakebeth_. Should be done in about a month or so. I'll post a heads up when it is.
We academics love playing games too, and we'll work it into our jobs whenever we can.

Yeah. Actually we've done a number of shows with projections and plan to continue to do them.
The Quakebeth project came about because the show that we had planned had no projection component this year, so I cast about for a project for the class to do and hit upon machinima.
